Job overview

Summary of the Role:

Responsible for ensuring the highest possible standard of food preparation and cooking for patients, staff and visitors. Specifically to ensure Food Safety is given the upmost consideration and that all legislative and departmental practices are carried out strictly at all times paying particular attention to allergen, ingredient, safe cooking methods and nutritional needs.

Main duties of the job

Food preparation, production and service to the highest possible standard for all users

• To ensure all foodstuffs are handled in accordance with national and local food safety legislation and best practice with strict observation to HACCP operational systems.

• Strict observation of standardised recipes to ensure allergen and nutritional guidelines are followed

• Follows at all times food wastage standards ensuring this is kept to the minimum

• Daily completion of of daily audit records including food safety (HACCP) and cleaning

• To be familiar with the security of the department and its contents.

• Report equipment defects to ensure remedial action is taken

• Responds to requests for further/out of hours food requirements for patients and dining rooms

• Service of food, including ‘back bar’ to customers within dining areas

Detailed job description and main responsibilities

• Qualified Chef with the associated skills to produce to a high standard all patient and staff menu items (including modified diets) as well as ad hoc function menus (E)

• Demonstrates good and safe kitchen equipment use including knife handling skills  (E)

• Knowledge of the application of all regulatory and legislative requirements required to ensure a Healthy & Safe environment including: Hazzard Analysis Critical Control Points (HACCP); Safe Working; COSHH; Detailed Food Safety and Handling; Patient and Customer Care (E)

• Patient and client interactions which portray a professional, supportive and caring service (E)

• Good Food Allergens knowledge to ensure customer safety (E)

• Good Food Nutritional knowledge to ensure customer safety (E)

• Constructive team working and participation including multi-disciplinary team relationships (D)

• Personal organisation and time management (D)
